![]() ![]() ![]() ![]() ![]() | Cuisine : Gujarati Taste : Mild Course : Snacks Category : Veg Ingredients Quantities Rice flour (sieved) 2 cups Yogurt (beaten) 4 tbsps Salt to taste Soda bicarbonate 1/2 tsp Green chilli paste 1 tsp Ginger paste 1/2 tsp Banana leaves (cut into 5" dia. or square) 8 Oil 1/4 cup Method of preparation 1. Take rice flour in a bowl. Add yogurt, one and a half cups of water, salt and mix. Add green chilli paste, ginger paste and mix. Adjust consistency. Add baking soda and mix. 2. Heat a tawa. 3. Take banana roundels/squares. Apply oil. Dribble some oil on tawa. 4. Pour the rice batter on banana leaf and place it on the tawa. Cover with another banana leaf (oily side inside) and cook. Turn and cook the other side similarly. If you wish to have a half-moon shaped panki, put the batter on one side of the leaf roundel and fold the other side over. 5. Serve in the leaf itself.
